Butternut Squash Crostini

Here’s another tasty and easy to make recipe for any gathering you are planning, our Butternut Squash Crostini. In the recipe below you’ll use our Spice Pairing for Chardonnay but, it works equally well using our Pinot Noir Spice Pairing … just make sure to match the Spice Pairing you use with the wine you plan to serve!

With little prep and only 7 ingredients (including garnish) this crostini recipe will become one of your go to dishes!

Ingredients:

1 cup Butternut Squash, peeled & cut into small dice (or brunoise)

¼ cup sweet yellow Onion, finely chopped

1 Tbs  unsalted Butter

2 tsp Winemaker’s Pantry ™ Spice Pairing for Chardonnay

½ cup Goat Cheese, Cream Cheese or Ricotta

½ French baguette, sliced into 16 ¼-inch pieces

Parsley leaves for garnish, stems removed

Preparation:

Toast baguette slices at 350 degrees for 5-7 minutes. They should be a little crispy on the outside, but still tender on the inside. Set aside.

Add the butternut squash, onion, butter and Winemaker’s Pantry Chardonnay spice blend to a sauté pan and cook over medium heat about 5 minutes. Remove from heat.

Assemble the crostini by spreading the baguette slices with a little of the cheese and top with a small spoonful of the butternut squash mixture. Garnish each slice with a parsley leaf and place onto a platter. Serve immediately (or, reheat squash mixture just prior to assembly.)

Idea starter: Feel free to expand on this basic mix by adding in diced Granny Smith apple to the sauté and/or adding pomegranate seeds as an additional garnish.
