Quick Blueberry Compote
This sweet and savory compote, showcasing Winemaker’s Pantry™ Spice Pairing for Merlot, offers a simple-to-make opportunity to jazz up cream or goat cheese for a quick entertaining bite. It’s deep fruit flavor pairs well with the subtlety of merlot and it’s soft tannins, while the addition of cooked shallot and our spice blend keep it from being too sweet.
Serve it with crackers or slices of toasted baguette as a crostini or, use to top grilled chicken thighs, lamb chops or roast duck.
Ingredients
- 8oz package frozen Wild Blueberries
- 1/3 cup seedless Raspberry jam/jelly
- 1/4 cup Shallot, minced
- 2 Tbsp Unsalted Butter
- pinch of Sea Salt (or to taste)
- 1 Tbsp Winemaker’s Pantry™ Spice Pairing for Merlot
- Chopped Chives for garnish
Preparation
Step 1 – Sauté shallot in butter over low heat for 3 minutes
Step 2 – Add remaining ingredients and continue cooking 5 -7 minutes or until thickened; chill
Step 3 – For an easy entertaining bite: spoon compote over goat or cream cheese; serve with sliced baguette or crackers
